Baked chicken doesn’t sound all that exciting, but I plucked an idea for it from an appetizer we had over the weekend.  So, thanks Jen!  :)  I made this last night in the moments between running errands, talking to my friend in Istanbul (*waves at Elizabeth*), and going to pick up my husband from work.  It’s easy, tasty, and totally works better than Shake ‘n Bake .

½ to 1 pkg of dry stuffing – your choice of brand
mayonnaise (about 3 T per 4 chicken breasts)
chicken (bone-in or boneless,  your choice)

Whirl the stuffing cubes or crumbs in a food processor or blender until fine particles appear (if you use a stuffing that has a separate seasoning packet with it, put that in to whirl as well).  Place the seasoned crumbs in a bowl, prepare a small container with the mayo.

Brush the chicken with the mayonnaise on both sides, and then liberally dip the chicken the crumbs.  Place on a baking tray.  I used Pepperidge Farms stuffing and a half-bag of stuffing cubes readily covers 8-10 pieces of boneless chicken.

Bake at 350°F for 35-45 minutes, depending on your oven.  I generally bake according to my nose; when my nose tells me it’s done, it’s done.  The chicken will be juicy & tender and well-seasoned, thanks to the crumbs.

You can alternately use a honey mustard dressing in place of the mayo and then put a side of honey mustard out for dipping.  :)  This dish can also be a “make ahead”-type meal if you have a delay-bake setting on your oven.  Just be sure that you’re at the house when the oven goes off so nothing overbakes and/or dries out.

Serve with a veggie of your choice and enjoy!
