1 head of cauliflower, chunked and cored

2 c. chicken broth (or 2 c. water w/ bouillon)

3 med. carrots, peeled & chunked

3 stalks of celery, washed & chunked

1 t. thyme

place vegetables & broth in slow cooker for 4-5 hours on high or 8-10 hours on low, lid on.  When time is up, use a stick blender and puree all ingredients (or use a blender).  Process until very smooth.

Add the following ingredients:

1 jar Ragu Double Cheese sauce

2 c. milk

8 oz. grated cheese (anything from colby to cheddar)

Stir all ingredients until smooth; season with kosher salt & pepper to taste. Serve with crusty bread or savoury crackers. :) YUM!.
